This recipe is another healthy hit in our family!
It can be served as a snack, or as a side with chicken breast for example or fish fillet!
Baked broccoli tots with fresh tomato dipping sauce

- For the broccoli tots
1 medium heads broccoli, cut into florets
1/4 diced onion
2 tsp finely ground breadcrumbs
1 egg
2 tsp grated cheese
Few leaves of coriander and mint
- For the tomato sauce
2 tsp olive oil
3 medium ripe tomatoes finely diced (keep the juice)
1/2 tsp agave syrop
Few leave of basil
Directions
- PREPARE THE TOMATO DIPPING SAUCE
- Heat the oil in a large pan over, medium heat.
- Add the onion and cook until softened but not browned (about 5 to 8 minutes)
- Add the tomatoes and agave syrup. Turn heat up to high and let the juices come to a boil.
- Then turn heat down to medium-low. Cover and cook for about 10 minutes, until the tomatoes are very soft.
- Mash the tomatoes with a fork and cook 5 more minutes so the juice can reduce.
- Blend with fresh basil
- PREPARE THE BROCCOLI TOTS
- Preheat the oven to 200°C. Grease a baking sheet with a thin layer of oil.
- Boil water and cook the broccoli for 2 minutes. Then remove and shock the broccoli with cold water to stop the cooking process. Drain well.
- Chop broccoli and mix with the egg, onions, grated cheese, breadcrumbs, and herbs.
- Scoop about 1 to 2 tablespoons of mix and gently press between your hands into a firm ball and place on your prepared baking sheet. Repeat with the rest of the mixture.
- Bake until golden brown and crispy, 18-24 minutes, turning half way.
