Ingredients

  • For the broccoli tots
  • 1 medium heads broccoli, cut into florets

  • 1/4 diced onion

  • 2 tsp finely ground breadcrumbs

  • 1 egg

  • 2 tsp grated cheese

  • Few leaves of coriander and mint

  • For the tomato sauce
  • 2 tsp olive oil

  • 3 medium ripe tomatoes finely diced (keep the juice)

  • 1/2 tsp agave syrop

  • Few leave of basil

Directions

  • PREPARE THE TOMATO DIPPING SAUCE
  • Heat the oil in a large pan over, medium heat.
  • Add the onion and cook until softened but not browned (about 5 to 8 minutes)
  • Add the tomatoes and agave syrup. Turn heat up to high and let the juices come to a boil.
  • Then turn heat down to medium-low. Cover and cook for about 10 minutes, until the tomatoes are very soft.
  • Mash the tomatoes with a fork and cook 5 more minutes so the juice can reduce.
  • Blend with fresh basil
  • PREPARE THE BROCCOLI TOTS
  • Preheat the oven to 200°C. Grease a baking sheet with a thin layer of oil.
  • Boil water and cook the broccoli for 2 minutes. Then remove and shock the broccoli with cold water to stop the cooking process. Drain well.
  • Chop broccoli and mix with the egg, onions, grated cheese, breadcrumbs, and herbs.
  • Scoop about 1 to 2 tablespoons of mix and gently press between your hands into a firm ball and place on your prepared baking sheet. Repeat with the rest of the mixture.
  • Bake until golden brown and crispy, 18-24 minutes, turning half way.
  • ENJOY!!
