Berry tart

Here is an easy and delicious recipe that reminds me my childwood. When we were on vacation with my grand parents, every Sunday my grand father was buying a strawberry tart like this: shortbread crust, vanilla whipped cream & fresh fruits.

 It is much more easier to do than it looks. You can even ask your kids to prepare it with you.and

Ingredients

  • Shortbread crust
  • 250 gr of flour

  • 125 gr of non refined sugar

  • 100 gr of unsalted butter

  • 1 egg

  • 1 lemon zest

  • Whipped cream
  • 150 gr of fresh full fat liquid whipping cream

  • 2 pinch of vanilla powder

  • 15 gr of ice sugar

  • Fresh fruits garniture
  • 400 gr of strawberries

  • 125 gr of raspberries

  • 125 gr of blueberries

  • 125 gr of blackberries

  • Few leaves of mint

Directions

  • Make the shortbread crust
  • Preheat oven to 180°C
  • Mix together butter, flour, egg, non refined sugar & lemon zest
    Press into the bottom of a tart pan
  • Bake for approximately 20 minutes, or until lightly golden brown
  • Remove from oven and allow to cool completely before filling
  • Make the vanilla whipped cream
  • Make sure the cream is very cold before starting
  • Pour whipping cream, sugar and vanilla into a bowl and whisk on high speed until medium to stiff peaks form
  • Fill the tart
  • Once the dough is completely cool, fill it with the whipping cream
  • Add fruits randomly
  • Add few leaves of mint on the top
  • ENJOY!!

Notes

  • It is important to buy a full fat cream for the whipped cream. Make sure it is very cold before whisking it. You can even put your empty bowl in the freezer for 15 minutes before starting!
