I wanted to share our butternut squash and coco soup recipe.

It is an easy and quick recipe that is can be served hot or cold.

✔️contains potassium to prevent high blood pressure,
✔️contains fiber, which can help prevent constipation and maintain a healthy digestive tract,
✔️ loaded with vitamin A which is very important for healthy eyesight
✔️ contains manganese which maintains healthy bone structure, calcium absorption, and improve the mineral density of the spinal column,
✔️contains vitamin C to boost immune system
✔️ its high antioxidant content helps to reduce inflammations.

Ingredients

  • 1 kg butternut squash

  • 200 ml coconut cream

  • salt/pepper/coriander/ginger/cumin

Directions

  • Peel the butternut and cut in cubes
  • Put in a pan with 30cl of water and cook until the butternut is soft
  • Add coconut cream and blend with a mixer
  • Add pinch of coriander, ginger and cumin depending on your tastes.
  • Adjust seasoning with salt and pepper.
  • ENJOY!!

Notes

  • I served it with a homemade bread bruschetta! Recipe to come soon.
