Spinach & Cheese Lasagna rolls

We really love lasagna at home as it is tasty, healthy and you can prepare them in many different ways.
Today, I had few fresh lasagna sheets remaining… Not enough to prepare a new dish of lasagna and I wanted to try this easy recipe

Spinach & Cheese Lasagna rolls

  • 6 fresh lasagna sheets

  • 6 handfull Spinach

  • 1/2 red onion

  • 2 gloves of garlic

  • 100 gr of ricotta

  • 200 gr tomato sauce

  • 100 gr fresh cream (optional)

  • Gratted cheese

  • Fresh coriander leaves

  • 2 tsp Olive oil

  • Sea salt,pepper


  • Preheat oven to 180˚C.
  • Minced the onion and garlic and saute them in a sauté pan over medium heat.
  • Add spinach and cook just few minutes. Set aside.
  •  In a medium-sized bowl, mix the ricotta, cooked spinach, salt, and pepper.
  • Spoon some of the spinach mixture onto each lasagna sheet and roll them tightly.
  • Spread 1/2 of the tomato sauce on the bottom of a baking dish.
  • Place the lasagna rolls in the dish
  • Top with the rest of tomato sauce, fresh cream (optional) and grated cheese.
  • Bake for 35-40 minutes or until the cheese is brown and crispy.
  • Top with coriander just before serving.
  • ENJOY!!
