This carrots salad is just insane! It is perfect as a light diner or to go as a side dish.
Warm Carrots Salad with Orange & Feta

8 colored carrots
1 orange
20 gr salt butter
40 gr feta
1 spoon of olive oil
Few pistachios / pine nuts
coriander
2 pinches cumin
1 spoon honey
Directions
- Wash, peel and cut the carrots in bars.
- Put the carrots in a pot with 2 glass of water. Bring water to boiling and cook for 5-7 minutes or until the carrots are smooth.
- Reduce the heat. Add butter, the juice of the orange and cumin.
- Cook until the juice is totally evaporated and carrots get golden brown. Add salt, pepper and leave to cool down.
- Just before serving, add olive oil, honey, feta, nuts & coriander.
- ENJOY!!
