This tomato tatin is a great summer meal. It is made of sweet and sour-slow cooked tomatoes on a crisp puff pastry. Serve it warm or cold with a salad & Enjoy!

Ingredients
1pastry dough
25rusher tomatoes (medium size)
2spoonsof raw sugar
2spoonsof red wine vinegar
2spoonsof red pesto (blend 20 dry tomatoes with basil)
Sea salt
Thym
Directions
Preheat oven to 200°C.
In a pie mold, put raw sugar, vinegar and salt.
Wash the tomatoes, cut them in 2, put them round side on the mold. Cook for 30 minutes.
Spread pesto on the dough. Place the dough on the tomatoes (pesto side down tomatoes). With a fork, make some holes on the dough.
Cook for another 25/30 minutes or until dough is cooked.
