Tomato Tatin

This tomato tatin is a great summer meal. It is made of sweet and sour-slow cooked tomatoes on a crisp puff pastry. Serve it warm or cold with a salad & Enjoy!

Ingredients

  • 1 pastry dough

  • 25 rusher tomatoes (medium size)

  • 2 spoons of raw sugar

  • 2 spoons of red wine vinegar

  • 2 spoons of red pesto (blend 20 dry tomatoes with basil)

  • Sea salt

  • Thym

Directions

  • Preheat oven to 200°C.
  • In a pie mold, put raw sugar, vinegar and salt.
  • Wash the tomatoes, cut them in 2, put them round side on the mold. Cook for 30 minutes.
  • Spread pesto on the dough. Place the dough on the tomatoes (pesto side down tomatoes). With a fork, make some holes on the dough. 
  • Cook for another 25/30 minutes or until dough is cooked.
  • Serve hot or cold!
