Roasted butternut squash & Goat cheese Salad

Butternut squash is the perfect autumn vegetable. Indeed, it does not only taste absolutely delicious, when roasted it is also tender, caramelized, and so tasty when it comes with soft spices.

And, it has also the following benefits on your health:

Roasted butternut squash & Goat cheese Salad

Ingredients

  • 250 gr of fresh spinach

  • 1 bunch of coriander

  • 1 medium butternut squash

  • 1 log of goat cheese

  • 1/2 handful of pistachio

  • 1/2 handful of pine nuts

  • 1/2 handful of cashews

  • 1 lime

  • 4 spoons of olive oil

  • 3 spoon of maple syrup

  • 1/2 teaspoon of ginger powder

  • 1/2 teaspoon of cumin powder

  • 1/2 teaspoon of sea salt

Directions

  • Prepare the roasted butternut squash
  • Preheat the oven to 180°C.
  • Peel & cut the butternut in cubes.
  • Place the squash on a sheet pan.
    Drizzle with the olive oil, salt, maple syrup, cumin, ginger.
    Toss well.
    Arrange the squash in one layer and roast for 25 to 30 minutes, until the squash is tender, turning once with a metal spatula.
  • Cool down.
  • Prepare the Salad base
  • Wash & dry the salad & coriander.
  • Mix the salad & coriander and place in a plate.
  • Drizzle half of the pistachio, half of the pine nuts & half of the cashew.
  • Place nicely the roasted butternut & goat cheese.
  • Finally, drizzle with the rest of the nuts.
  • Prepare the dressing
  • In a small bowl, mix olive oil, lime juice & 2 spoons of maple syrup.
  • Add the dressing on the salad just before serving.
