Milk Rice is one of my favorite winter confort food. It reminds me my grandma who was cooking it a lot! I just adapted the recipe in order to use homemade almond milk. I top it with the perfect seasonal autumn fruits, the apples that I can cook in apple syrup… and wow, it is just more than amazing 🙂
Pre cook the rice in boiling water for 3 minutes. Drain well.
Bring the almond milk to a boil on medium heat and add the rice. Reduce the heat to low, and cook until the rice is tender, for about 30 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan.
Add 2/3 of the apple syrup and continue cooking for 5 minutes. Make it cool down for 5 minutes and serve in the dish(es).
Prepare the candied apples
Peel and cut the apples in slices.
In a pan, over low-medium heat, cook the apples, dry raisins & the rest of apple syrup until they get gold.
Serve
Top the rice pudding with the candied apple, dry raisin and nuts.
