Okara, tahini & Raisins cookies

This recipe allows you to use the Okara you obtain while making homemade almond milk. If you do not have Okara, just replace it by almond or chestnut flour. I like adding some tahini to bring softness and a nice taste. You can easily replace dry raisins by chocolate chips.

  • 100 gr of rice flour

  • 100 gr of almond Okara (or almond/chesnut flour)

  • 60 gr of raw sugar

  • 1 teaspoon of baking powder

  • 50 gr of coconut oil

  • 50 gr of tahini

  • 1 Egg

  • 45 gr of crushed almond

  • 45 gr of dry raisins


  • Pre heat oven to 180°C.
  • Soak the dry raisins in hot water.
  • Combine all the dry ingredients (flour, okra, sugar, baking powder) and mix well. Add coconut oil, tahini & egg. Mix well.
  • Drain the dry raisins. Stir in the crushed almonds and dry raisins in the cookie dough.
  • Make about 25g balls of dough between your hands, then crush them on a baking sheet lined with baking paper.
    Cook for 10 to 12 minutes for a soft version. For a crispier version, cook few more minutes. Let cool.
