This recipe allows you to use the Okara you obtain while making homemade almond milk. If you do not have Okara, just replace it by almond or chestnut flour. I like adding some tahini to bring softness and a nice taste. You can easily replace dry raisins by chocolate chips.
Combine all the dry ingredients (flour, okra, sugar, baking powder) and mix well. Add coconut oil, tahini & egg. Mix well.
Drain the dry raisins. Stir in the crushed almonds and dry raisins in the cookie dough.
Make about 25g balls of dough between your hands, then crush them on a baking sheet lined with baking paper. Cook for 10 to 12 minutes for a soft version. For a crispier version, cook few more minutes. Let cool.
