To be honest I am not a big fan of lentils… But this lentils curry is a must try!! Cooked in coconut milk with green curry & soft spices it is just WOOOOW… I like serving it with raw seasonal vegetables to bring some freshness and crunchy. Enjoy!!
In a pan with 1 spoon of olive oil, cook the garlic, mushrooms, onion, ginger and curry paste for few minutes over medium low heat.
Add the coconut milk, green pepper, peas, and drained lentils. Cook for 15 more minutes over low heat so the lentils can finish cooking in the coconut milk and get tasty.
