Vegetables & Turmeric Broth

Nothing could be easier than making this homemade vegetable broth. Ideal for warming up this season, and it’s much healthier than ready-made broths. This broth is perfect for preparing before the end of year festivities and detoxifying after them! It is also a way to limit waste since you can use any leftover food ingredients. I like to use the veggies that are lying around as well as turmeric for its pretty color and health benefits.

In addition to various vitamins and minerals, turmeric has many other active substances, the best known of which are curcumin and curcuminoids. These are the reason of the strong color of turmeric, but also many of its benefits:

  • Antioxidant: The active ingredients in turmeric help the body to detoxify. They eliminate free radicals present in excess in our body and thus limit the aging of cells.
  • Anti-inflammatory: Turmeric is known for its effectiveness against chronic and intestinal inflammation. In India and China, it has been used for thousands of years to prevent and relieve inflammatory pain.

The advantage of this recipe is that you can use just about any veg you have on hand. I am giving you an indication of the seasonal vegetables that I used for the broth in the photo.

Ingredients

  • Pour le bouillon
  • 1 litre of water

  • 1 teaspoon of turmeric

  • 2 gloves of garlic

  • 1/4 of butternut

  • 1 turnip

  • 2 carrots

  • 1 onion

  • 1 small leek

  • 2 tablespoons of olive oil

  • Pour la garniture
  • 1/2 carrot

  • Few slices of red cabbage

  • 1 small cucumber

  • Few almond

Directions

  • Prepare the broth
  • Wash and cut the vegetables in cubes
  • In a large saucepan, sauté the garlic cloves and onion in olive oil and turmeric for 2 minutes. Be careful that it does not burn out.
  • Add all the other vegetables and sauté for a few more minutes. 
  • Add water, a little salt and simmer for 30 minutes.
  • Prepare the garnish
  • Wash, peel & slice the vegetables of the garnish.
  • Serve the broth
  • Once the broth vegetables are tender and have infused the broth, you are ready to serve!
  • Top the broth with the garnish vegetables and almonds just before serving. I didn’t have any on hand, but feel free to add some fresh herbs!
